The main differences between draft beer and lager beer are as follows:


1、 Different brewing techniques


  1. Draught Beer:

    • Adopting a special brewing process, without undergoing high-temperature sterilization treatment, only using microporous membrane filtration and other methods to remove impurities and microorganisms.

    • Usually, cold sterilization methods such as diatomaceous earth filtration or centrifugal separation are used to maintain the original flavor and active yeast of beer.

  2. Mature beer:

    • After strict high-temperature sterilization treatment, pasteurization or instantaneous high-temperature sterilization methods are generally used.

    • During the sterilization process, high temperatures can cause some heat sensitive flavor compounds and nutrients to be damaged to a certain extent.


2、 Different appearance characteristics


  1. Draught Beer:

    • The appearance is usually cloudy because it contains a certain amount of small particles such as active yeast and protein.

    • Rich and delicate foam, white and lasting.

  2. Mature beer:

    • The liquor is relatively clear and transparent, with no obvious suspended solids.

    • Foam may be slightly inferior to draft beer, but it also has certain stability.


3、 Different taste and flavor


  1. Draught Beer:

    • The taste is refreshing and delicious, with a strong malt aroma and a bitter taste of hops, as well as a light sweetness and fruity aroma.

    • Due to the presence of active yeast, there will be a slight yeast flavor and fermented aroma in the mouth, making the taste more layered.

4、 Different shelf lives


  1. Draught Beer:

    • The shelf life is relatively short, usually around 3-7 days, and it needs to be stored under low temperature conditions to slow down the activity of yeast and the growth of microorganisms.

    • High storage conditions are required, such as temperature, light, and other factors that can affect the quality and shelf life of draft beer.

  2. Mature beer:

    • The shelf life is relatively long, usually ranging from 6 months to 1 year or even longer.

    • Due to the high-temperature sterilization treatment, the microorganisms in the cooked beer are basically killed, and the stability is high. It can also be stored for a period of time at room temperature.


5、 Different nutritional values


  1. Draught Beer:

    • It contains rich nutrients such as vitamins, amino acids, and active yeast, which have certain health benefits for the human body, such as promoting digestion and enhancing immunity.

    • Because it has not undergone high-temperature treatment, the nutritional components in draft beer are relatively complete.

  2. Mature beer:

    • During the high-temperature sterilization process, some nutrients may be damaged to a certain extent, but it still contains a certain amount of nutrients such as vitamins and minerals.
